Cleansing Kitchari

Kitchari is a staple food in Ayurveda. A great meal for cleansing since it’s easy to digest. The combination of warm, well cooked foods, spices and ghee make it both nourishing and satisfying. And it’s balancing for all body types! Use this recipe when you’re in need of a digestive reset.

Ingredients

5-6 cups filtered water 

1 cup basmati rice 

½ cup whole mung beans or yellow split mung beans

2 cups chopped vegetables of choice - celery, greens beans, beets, carrots. Try to stick to 2-3 veggies per batch

1 Tbsp ghee 

1 tsp fresh ginger root, peeled and minced

½ tsp cumin seeds

½ tsp fennel seeds 

½ tsp turmeric

1 tsp cumin powder

2 tsp coriander 

salt to taste

cilantro and lime to garnish

Instructions

Rinse mung beans and rice, cover with 2+ inches of extra water and soak overnight. Drain before cooking.

Melt ghee in the bottom of a soup pot. Add ginger root, cumin seeds, and fennel seeds, roast to a light brown color 2-3 min. 

Add mung beans and rice, coating with spice mixture. Then add water, cook for about 20 minutes. Add powdered spices, harder vegetables and more water if needed, cook until soft, about another 20 minutes. Add enough water so it’s soupy, not thick.
