Oat Pancakes

Pancakes are wonderful in the colder winter months, but starting the day off with the traditional variety often has me heading back to bed to nap off a food coma.

This recipe is made with just a couple light ingredients, which will leave you feeling satiated, energized and ready to take on the day.

Ingredients

1 cup old-fashioned rolled oats

½ cup almond milk

¼ cup apple sauce

1 Tbsp maple syrup

¼ tsp cinnamon

¼ tsp ground ginger

dash cardamom

½ tsp baking powder

½ tsp vanilla

dash of salt

1 Tbs ghee for frying in pan


Instructions

Add all the ingredients to a blender and pulse to combine.

Melt ghee in a cast iron pan or skillet over medium heat.

Pour batter in center of pan. Spread out with a spoon or by tilting the pan.

Cook until the edges are golden brown and there’s bubbles in the center.

For extra crispy pancakes add more ghee to the pan when it’s time to flip.

Top with fresh fruit, maple syrup, apple sauce, hemp seeds or almond butter.

*If you like extra spice, increase the amount of cinnamon, ginger and cardamom.

*Add chia seeds, ground flax meal or almond meal to add an extra energy boost.

*The ingredients listed makes 2 large or 4 small pancakes. If you’r feeding a lot of people increase the recipe x 3 or 4.

*Extra batter can be stored in the fridge for a couple of days.
